I didn’t think that mixing rice with ice cream would lead to a tasty dessert, So I added the mango slices, to make it more tropical and fruity.

For the ice cream, you can make it with your preferred flavor, I just love it with Vanilla, and also you can replace the mango with other fruits you may like more, So it’s optional.

I love this Sticky Rice Ice Cream in one bowl, It’s full of flavors, and you can decorate it with some chocolate chips on top or a caramel sauce.

Ingredients

For the Sticky Rice

  • 1 cup glutinous (sticky) rice
  • 1 cup coconut milk
  • 1/4 cup sugar
  • 1/2 teaspoon salt

For the Vanilla Ice Cream

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup sugar
  • 1 tablespoon vanilla extract
  • 5 large egg yolks
  • 2 ripe mangoes, peeled and sliced

How to Make Sticky Rice Ice Cream?

Preparing the Sticky Rice:

Step 1:

Rinse the sticky rice several times until the water runs clear.

Step 2:

Soak the rice in water for at least 4 hours.

Step 3:

Drain the rice and place it in a steamer lined with cheesecloth.

Step 4:

Steam the rice for about 20-25 minutes.

Step 5:

While the rice is steaming, mix the coconut milk, sugar, and salt in a saucepan. Heat gently until the sugar is dissolved, but do not boil.

Step 6:

Once the rice is cooked, transfer it to a bowl and pour the coconut milk mixture over it. Stir well, cover, and let it sit for at least 30 minutes to absorb the flavors.

Making the Vanilla Ice Cream:

Step 1:

You can make the ice cream with any flavors you desire, I love this dessert with the vanilla one, Now in a medium saucepan, combine the heavy cream, whole milk, and sugar. Heat over medium heat until the mixture is hot.

Step 2:

In a separate bowl, whisk the egg yolks. Gradually add a small amount of the hot cream mixture to the yolks, and keep whisking constantly.

Step 3:

Pour the tempered egg mixture back into the saucepan with the remaining cream mixture.

Step 4:

Cook over low heat, and keep stirring until the mixture thickens.

Step 5:

Remove from heat and stir in the vanilla extract, Chill the mixture in the refrigerator for at least 4 hours, or overnight.

Step 6:

Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions. Transfer the ice cream to a container and freeze until firm.
