Easy Peanut Butter Chocolate Chip Cookies

These peanut butter chocolate chip cookies are chewy, chocolaty, and don’t have any kind of flour in them. Their simple ingredients include peanut butter, coconut sugar, an egg, baking soda, vanilla, and clean ingredient chocolate chips. They are easy to make, mixed in only one bowl, then baked and completed in under 20 minutes from start to finish!

INGREDIENTS

  • 1 cup of a good quality peanut butter. Look for one with just roasted peanuts and possibly salt as ingredients
  • 1 cup coconut sugar will add a rich caramel flavor
  • 1 egg at room temperature. Waiting for your egg to reach room temperature is worthwhile. As a result, you’ll have fluffier cookies!
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda. Baking soda enhances the flavor and texture of cookies
  • 1/2 cup – 3/4 cup chocolate chips, depending on how chocolaty you like your cookies
  • Note: Whatever chocolate chips you have in your pantry will do the trick. However, I’d recommend some that are made without icky ingredients like soy or preservatives. Some brands that make healthier chocolate chips like Enjoy Life.

HOW TO MAKE EASY PEANUT BUTTER CHOCOLATE CHIP COOKIES

Step 1:

Preheat oven to 350º then line a baking sheet with parchment paper.

Step 2:

Firstly, add all ingredients except chocolate chips to a medium mixing bowl and combine well. Secondly, fold in chocolate chips.

Step 3:

Scoop out heaping tablespoons of dough and roll them into balls between your palms. Then place dough balls three in a row, leaving some space in between.

Step 4:

Bake for 10 minutes, or until edges start to firm. Cookies may start to crack a bit on top.

Step 5:

Allow them to cool before taking them off the baking sheet or eating.
