Easy Breezy Beautiful Paleo Beef Enchiladas

This is the story behind making this Paleo Beef Enchiladas, “I want something different for dinner,” I texted my husband. Unbeknownst to him, it was now solely on his shoulders to come up with something great. Like a lot of families, we have staple meals that we make often, and for good reason; they’re easy, delicious, and healthy.

On this day, however, I felt the need to be a rebel. “Stir-fry, stuffed peppers…Enchiladas?” He suggested, successfully completing the assignment he didn’t know he was given. Enchiladas it was. I went on a mission to create a recipe that was both no-hassle and flavorful. These Easy Breezy Paleo Beef Enchiladas are finished in less than 30 minutes from start to finish, tasty, and paleo, Whole30, gluten and dairy-free.

INGREDIENTS

  • 1 lb ground beef grass-fed
  • 1/2 an onion diced finely
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 1 jar Siete Enchilada Sauce grab an extra jar if you want saucier enchiladas
  • 1 package Siete Tortillas
  • 1 tbsp cooking fat avocado, coconut, or olive oil

How to Make Paleo Beef Enchiladas

If you haven’t heard of Siete Foods, you’re missing out! They are a family owned company that makes grain-free, delicious Mexican food, and their tortillas and enchilada sauce are great options for clean ingredients in this recipe. Additionally, their enchilada sauce doesn’t compromise the flavor and integrity of the dish like using store-bought sauces sometimes does.

Step 1:

Firstly, preheat oven to 350℉. Secondly, over medium heat add a tablespoon of oil to a large skillet and sauté finely diced onions until soft, about 5 minutes.

Step 2:

Stir in ground beef and season with salt, pepper, garlic powder, and cumin. Cook until the meat is browned, breaking it apart with a spoon. Remove the skillet from heat, then stir in a few tablespoons of enchilada sauce to coat the meat.

Step 3:

Spread a thin layer of enchilada sauce on the bottom of a 9×13 baking dish then fill each tortilla with about 3 tbsp of meat mixture and roll them up. Place them side by side in the baking dish.

Step 4:

If there is left over meat, sprinkle it along the sides of the enchiladas then cover everything with the remainder of the enchilada sauce.

Step 5:

Bake for 15-20 minutes and remove the dish when it’s done. Sprinkle with cilantro and sliced avocado. Enjoy!

Tips

  • For saucier enchiladas you can get another jar of Siete Enchilada Sauce and add as much as you’d like!
  • It may be helpful to microwave tortillas for about 10 seconds, which will make them easier to roll (especially if they’re refrigerated). Other varieties of Siete Tortillas will work in this recipe also.
  • You can Use pre-made Paleo-friendly enchilada sauce to save time.
  • Swap ground beef for ground turkey or chicken if you want.
  • Top with sliced avocado for added flavor.
