Instead of your regular salsa that is based only on tomatoes and some spices, this Avocado Cucumber Salsa is made with ripe avocados, crunchy cucumber, juicy tomato, zesty red onion, spicy jalapeño, and fragrant cilantro. These ingredients are mixed together with some other ingredients to make it juicy with chunks of different textures.

Also, if you want to make this salsa more special, as I sometimes do, I blend these ingredients using my blender to create a smooth and creamy texture. After blending for a smooth and creamy texture, I mix it with the chunks of the ingredients used. It turns out delicious, you can enjoy it on its own as a spread or incorporate it in various dishes.

Ingredients:

  • 2 ripe avocados, diced
  • 1 cucumber, seeded and diced
  • 1 tomato, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper

How to Make Avocado Cucumber Salsa?

Step 1:

Put all the chopped avocados, cucumber, tomato, onion, spicy jalapeño, and green cilantro in a big bowl.

Step 2:

Now, Squeeze the juice from a lime onto everything in the bowl. Then mix it all together gently. Sometimes, I transfer half of the mixture to my blender. Pulse it until smooth, then combine with the remaining chunky salsa in the bowl. Also, you can add some corn, and cheese chunks which I did for this recipe with some lettuce as well.

Now, Sprinkle a little salt and pepper on top, just enough to make it taste good.

Step 4:

You can eat it right away But I prefer to put it in the fridge for 30 minutes to make it even tastier before eating. Enjoy.
