1 cup fresh crab meat (preferably lump crab meat) 1 cup shredded sharp cheddar cheese 1/2 cup shredded Gruyère cheese 2 tablespoons mayonnaise 1 tablespoon Dijon mustard

In a bowl, add the fresh crab meat, mayonnaise, Dijon mustard, Old Bay seasoning, and finely chopped chives. Stir everything together until the crab is well-coated with the creamy and seasoning blend. This mixture will be the heart of your gourmet grilled cheese.

Next, lay out your pieces and distribute the shredded sharp cheddar and Gruyère cheeses on four of the bread slices, ensuring an even layer of cheese. Then, spoon the prepared crab mixture on top of the cheese, (I put just a little, unlike cheese that I put a lot) spreading it out to cover the entire surface of each slice. Top each one with the remaining slices of bread to form complete sandwiches.
