Macaire Potatoes

2 lbs (about 900g) potatoes (preferably russet or Yukon Gold) 6 tbsp unsalted butter, divided Salt and pepper, to taste 1/4 cup (60ml) heavy cream (optional, for richer potatoes) 2 tbsp chopped chives (optional, for garnish)

Step 1

Peel and cut potatoes into small pieces. Boil them in salty water for about 15-20 minutes.

Step 2

Drain the water and mash the potatoes until they're smooth.

Step 3

Add butter to the mashed potatoes while they're still warm. Mix well until the butter melts. Add a little salt and pepper.
