2 tablespoons olive oil 1 large onion, diced 2 cloves garlic, minced 3 carrots, peeled and sliced 2 celery stalks, sliced 2 potatoes, peeled and diced 1 zucchini, diced 1 cup green beans, chopped 1 can (14.5 oz) diced tomatoes 4 cups vegetable broth 1 teaspoon dried thyme

Wash and chop onion, garlic, carrots, celery, potatoes, bell pepper, and green beans into small pieces. Keep them in separate bowls.

Now, Heat olive oil in a large pot over medium heat. Sauté onion and garlic for about 3-4 minutes.
